This delicious gluten-free apple pie is perfect for winter holiday fare. And because it’s so easy to make, it’s a nice way to lighten your load when you’ll be doing a lot of other cooking. Dates balance the tartness of Granny Smith apples beautifully, but you can make endless variations on this pie by choosing almost any fruit that’s in season and pairing it with whatever dried fruit seems appealing.   • 2 cups teff flour
  • 1/2 cup extra-virgin coconut oil, melted, or other healthy vegetable oil
  • 1/2 cup maple syrup
  • 1/2 tsp sea salt


  • 1/4 cup water
  • 3 Granny Smith apples, thinly sliced
  • 3/4 cup pitted dates
  • 1 1/2 tsp ground cinnamon
